Chocolate Olive Oil Cake

  1. Preheat the oven to 170 degrees celsius.
  2. Grease a 7-inch baking pan and line with parchment paper.
  3. Melt chocolate and olive oil in a double boiler over simmering water.
  4. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  5. Remove from heat.
  6. Combine eggs and sugar in a large bowl; beat with an electric mixer until pale.
  7. Stir in melted chocolate and olive oil with a spatula until well combined.
  8. Sift flour and baking powder into chocolate mixture.
  9. Stir until well combined. Pour into the prepared baking pan.
  10. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  11. Cool completely before slicing and serving.
